There are many other unexplored cuisines in Peru such as the Amazon Cuisine and many other regional cuisines that are not as popular as what we usually called "Comida Criolla". Just in recent years, Chefs have started exploring new ingredients used in other regional cuisines and therefore discovering new possibilities of dishes. Also, they are contributing on promoting these regional and forgotten cuisines.
