"Tarwi" Andean bean balls with black mint sauce

INGREDIENTS:

To make the “albondigas”
1 cup "tarwi" paste
1 cup cooked Peruanita potato
1 egg
¼ cup flour
1 teaspoon garlic paste
2 tablespoons Peruvian yellow aji chilies paste
¼ cup onion, finely chopped
Salt & pepper to taste
Vegetable oil

 

To make the black mint sauce (Huacatay Sauce)
1 Boiled Peruvian hot pepper
½ Cup chopped onion
2 Tablespoons toasted peanuts
1 Bunch black mint
0.33 Lb. fresh cheese
¼ Cup milk Salt and pepper Vegetable oil

PREPARATION:
Grate the potato and mix it with the "tarwi" paste, garlic, aji paste, onion, egg, salt and pepper to taste. Make balls and once they are ready, cover them with flour and fry in hot oil.To make the black mint, in a large frying pan, sauté the onion, Peruvian hot pepper, black mint, and finally the milk. Then add the cheese, peanuts, salt and pepper to taste.
