INGREDIENTS:
2.4 lb boneless pork shank or pork loin
4 cups of water
10 garlic cloves, crushed
1 teaspoon of "achiote", milled
¼ teaspoon of cumin
¼ tea spoon oregano
1 small onion, cut in four
1 spoon of salt
¾ teaspoon of pepper

PREPARATION:
In a saucepan, combine all the ingredients with the water. Bring it to a boil, cover, and cook in medium heat for 1 hour. If the loin is thin, the cook time can be less. Slice the ham on the diagonal. This ham is the best to make "Butifarras".
