PIONONO DE MANJARBLANCO

INGREDIENTS:
6 eggs
1 cup sugar
½ teaspoon of crème of tartar
4 tablespoons of cornstarch or 4 tablespoons cocoa
4 tablespoons of all-purpose flour
A pinch of salt
1/4 teaspoon vanilla extract
1 cup manjar blanco

PREPARATION:
Preheat the oven to 325° F. Grease a 12-x19 inch square cake pan and line with parchment (baking paper). Swift flour and cornstarch and reserve. In a bowl, place the yolks and add 1/2 cup of sugar and the flour swifted with the cornstarch (or cocoa), salt and vanilla mix everything together. Using a electric mixer, beat the egg whites with the crème of tartar adding slowly the rest of the sugar until pale and thick. Fold in the egg yolks. Transfer prepared pan and bake for 20 minutes or until the top part looks light brown. Wet cheesecloth the size of the baking pan and place it on the table. Place the cake on the cheesecloth with the light brown part at the bottom. Spread the cake with manjar blanco and roll using the cheesecloth. Make it a tighter as you can. Allow to cool. Transfer to a plate and dust with confectioners sugar or chocolate fudge if using cocoa.
