TERESA IZQUIERDO
Teresa Izquierdo, the chef (even though she is uncomfortable with this term) is a 72-year old Lima woman who has spent nearly her entire life cooking. From her hands come dishes that are spicy, tasty and full of history. She is a faithful witness to an important time in Peruvian cuisine, which starts in 1940 and sums up the importance of Lima and Criolla cooking. She transmits through her dishes the values of an earlier generation, of her mother, Luz Divina, a daughter of Canete, where the black community was concentrated in colonial times and which serves as a cornerstone of Teresa's cooking. Luz Divina herself learned from her mother, who also knew the art of preparing a good meal even through her family, was poor. Teresa is industrious and versatile. In her recipes you will find the essence and technique of our traditional way of cooking, whose magic is in the ingredients and the perfect balance between onion, garlic and our aromatic hot peppers, or ajies.
